Carbonation stones, typically found on brite beer fermentation tanks, are designed for direct mounting via a Tri Clamp fitting. Each carbonation stone, made from sintered stainless steel SS316, is a submersible porous body that diffuses CO2 gas directly into brewing liquid. In an ideal system, the stone is mounted on the lowest part of the brite tank providing for the longest distance for CO2 to travel to the head. Some brewers use a carbonating stone inside a conical fermenter (or Uni Tank), rather than a brite tank. We also have a very popular carbonation guide (new window will open).
Carbonation stones are a fantastic tool to aerate wort. Keeping yeast at optimum health is achieved when the oxygen-deprived wort is aerated following the knock down process (usually inline immediately after exiting the chiller). This helps the yeast not only reproduce efficiently, but also maintain a healthy cell wall that is more tolerant to higher alcohol contents. This allows for several generations of yeast, and more importantly, can reduce fermentation time substantially resulting in faster batch turnover. These are merely guidelines; stones shorter than recommended simply take more time. Long necks are recommended for jacketed tanks, so the porous section protrudes fully into the main liquid body, however, this is not a requirement.
