Q and A with Ruby Street Brewing Found and CEO Brian Mollohan

Q:  What inspired the design and development of the 4-vessel brewing systems, and how has it evolved over time to meet brewers’ needs?

A:   The 4 vessel design was initiated by feedback from many of our customers stating that they would like to increase the capacity and flexibility of their existing 3 vessel 1 BBL systems.  Since most of these systems were used as pilot breweries where hot liquor (water) was already available, we were able to help those customers by adding a 4th vessel, allowing them to run (2) mash tuns, and (2) boil kettles simultaneously.  The need for this 4 vessel configuration grew to the point where we added it to our standard product line as a 2 BBL capable configuration.  Originally only offered in the gas version, we recently added the full electric version to our lineup as well.

 

Q:  What are the key challenges or considerations you’ve faced when scaling these systems for both small nano breweries and larger commercial operations?

A:  We launched the pro series systems with a specific focus on creating a brewing and cleaning process that was as similar as possible to larger scale production equipment.  We achieved this by integrating larger system features into our systems such as the bottom draining kettles, spray-ball CIP, and grain-out manway.  We also based all of our models on universal tri-clamp sanitary connections throughout to ensure full compatibility with any other brew-house equipment.

Q:  How have brewers adapted the system for unique brewing styles or beverages beyond beer, like kombucha or cold brew coffee?

A:  While we haven’t really touched the cold brew coffee side of the business, we have worked with several Kombucha customers to custom build the equipment to their specific needs.  We have also worked with customers using alternative grains to brew gluten-free beers.  In these cases, we worked directly with one of the major gluten free malt houses to help us develop a finer false bottom specifically suited for grains that don’t offer the traditional husk material that barley does.  We are always willing to work with existing customers by offering add-on customizations to their equipment to adapt the systems to changing demands.

 

Q:  What feedback from brewers has been most valuable in refining the Ruby Pro Nano system’s functionality?

A:  We take any and all feedback we get from our customers very seriously.  Most of the innovation that we have implemented from customer feedback revolves around portability, ease of cleaning, and basic automation.  If I had to key in on one specific item, it would be that we have learned that most small breweries are very short on space.  We have adapted the pro series system to this feedback by making them as compact and portable as possible so that they can be easily stored when not in use.  This allows breweries to free up space for other purposes as needed.
